Depending on the season, you will appreciate "Escalope de Foie Gras de Canard Poêlée aux Golden" (Pan-Fried Duck Foie Gras with Apples), "Barigoule d’Artichauts" (Artichoke Barigoule) or "Fricassée de Petites Queues De Lotte au Beurre d’Agrumes" (Monkfish Tail Fricassee with Citrus Butter).
